Yeah, I get that feeling. The Beatles are fantastic, but their sound is a bit... dated. New covers breathe new life into the songs. I'll go ahead and post a couple of my favorites:

Yep! Otis Redding’s version of “Respect” came out about two years before Aretha’s version, but hers is so definitive that it’s the one everybody remembers.

and then on the opposite end of the spectrum of how well known a cover is, I think Rare Earth's version of this song is the best but it's weirdly obscure

I agree so much.

Their recent covers album has a couple tracks that I'd also point to as being better than their originals.

As for other covers, David Bowie has quite a few that, in my opinion, are improvements on their originals:
