I'm not sure I can really recommend only watching Rebuild. It may all come together by the end, but it's the Cliff's Notes version of some sort of alternate 1985 where Shinji got the Sports Almanac, and I'm not convinced yet that it can replace the original.

In 1998, there was a show called Lost Universe. Thanks to budget problems, they tried to farm out the animation to a cheap Korean studio. Without any detailed character model notes. On a deadline. The fan response was so bad that they had to redraw the whole thing before the home video release.
The episode was titled "Yashigani Hofuru", so "yashigani" has become a Japanese fan term for episodes with horrible animation:
