He's gotten at least one big sponsor since this is the 2nd time Bounty has shown up. I'm not particularly bothered by it since it seems he's allowed to put his own spin on the advertisement that doesn't clash with the rest of the episode.

I'm not bothered with it either. He needs to support himself (Patreon can only do so much) and the sponsors are at least relevant to what he does. And like Quanta said, he puts his own spin on the plugs anyway.

(and Babish isn't kidding, freeze driers are EXPENSIVE)

That video made me wonder just how many more people actually have COVID-19 than the numbers say. It's pretty clear he's got it based on his symptoms, but they wouldn't test him because he wasn't hospitalized for it, so it doesn't count as an official diagnosis.

I do wish he'd discussed the origins of hot chicken, as it came out of Nashville's black community and wasn't well-known outside it until about a decade ago. Despite having grown up in Nashville and having had hot chicken before it was cool, I don't feel comfortable claiming any credit on the basis of my homeland, since I'm white and I'm concerned that would be a case of cultural appropriation. I'm not accusing Babish of any wrongdoing (this kind of veered off into being about me :-I), but I do feel it's a story that tends to be forgotten.

I hope that when better times come, one of the hot chicken restaurants flies him down to Nashville and sponsors an episode. The food's delicious, but the experience takes it to the next level.

Speaking of binging, I've been binging videos by Adam Ragusea, a former journalism professor turned food Youtuber who has put out a bunch of interesting videos about his approach to home cooking, with a focus on the science behind cooking and being practical about it (i.e. no, you don't need a stand mixer to make shit). His videos also include questions answered by food scientists, sociologists, professional chefs, and others in the food world about a wide variety of topics (like diving into the reasons why flour tortillas became ubiquitous in US Mexican places).

This video went up ten years ago today. It's incredible how much his situation's changed between then and now, how we've changed to support video producers like him instead of maybe only noticing him if he got a TV show somehow.

Verdict: Pretty good! I was so worried about overworking the dough that I think I didn't knead it long enough. It was a little too soft for my tastes, but it still held together. I bet most of the gnocchi I'm used to is made with ricotta because this tasted much more potatoey than what I'm used to. I'll definitely make it again at some point and I'll just knead the dough longer to get them more firm.
